Cinnamon Roll Mixed Berry Crumble




Dough Ingredients:

  • 4 tbsp of melted butter (DF/SF- Earth Balance)

  • 1 tsp granulated white sugar

  • 1 cup of Silk vanilla almond milk (warm)

  • 1 tsp of yeast

  • 3 cups of all-purpose flour (roughly)


Filling for Cinnamon Rolls:

  • 3 tbsp of softened butter (DF/SF- Earth balance brand)

  • 3 tbsp white granulated sugar

  • 1 tbsp cinnamon


Mixed Berry Ingredients:

  • 2 tbsp all-purpose flour

  • The juice of 1 lemon (roughly 2 tbsp)

  • 2 cups of frozen mixed berry fruit. (I used one with cherries, blackberries, blueberries and strawberries)

  • 6 tbsp of vanilla almond milk (DF/SF- Silk brand)

  • 1 tsp of cinnamon


Crumble Topping Ingredients:

  • 1/3 cup of brown sugar (packed)

  • 1/2 tsp of ground cinnamon

  • 4 tbsp of butter (melted) (DF/SF- Earth Balance brand)

  • 2/3 cup of all purpose flour


Mixed Berry Directions:

  1. Add all of the ingredients into a sauce pan and simmer on medium-low until they are incorporated and slightly thickened.

  2. Once the frozen berries have thawed, I like to slightly mash them- but this step is optional.


Crumble Topping Directions:

  1. Add all the ingredients into a bowl and mix until fully combined.


Directions:

  1. Add the melted butter, sugar, warm milk and yeast into a mixer and let sit (roughly 5 minutes) until the yeast starts to activate. The yeast will start showing bubbles/foam)

  2. Once you see the yeast activated, slowly add the flour 1/2 a cup at a time until the dough comes together and is smooth and elastic.

  3. Turn the dough out on a floured surface and kneed until the dough isn't sticky, but still soft and elastic.

  4. Let the dough rise in an oiled bowl until it has doubled in size. (Roughly 1 hour)

  5. Once the dough has sat for 1 hour, kneed it just to reshape it.

  6. Preheat your oven to 375 degrees

  7. Roll the dough out into a long rectangle, until the dough is thick enough to hold filling and to roll easily.

  8. Smooth the filling all over the top of the rolled out dough.

  9. Roll the dough length wise so you have a long spiral log.

  10. Cut the log into 2 inch slices and place the slices into a buttered baking dish facing upright. (Shown below)

11. Bake the rolls at 375 degrees until they are about half way baked. 12. Spread the mixed berry topping on top of the cinnamon rolls. 13. Now add the crumble topping all over the top of it. 14. Put the rolls back in the oven and bake until the crumble topping is a golden brown color. 15. Take them out of the oven, cool and enjoy!
