Y'all asked for easy recipes... so here's a SUPER easy one!
2 cans of Hormel white chicken chili with beans (DF option: Campbells Home Style Soup, Southwest-Style White Chicken Chili)
1 can of southwest corn (DO NOT DRAIN)
2 cans of pinto beans (or any white bean will do)
2 cups of chicken broth
1 cup of cheddar cheese (DF option: Daiya Cheddar Cheese)
1 block of cream cheese (8oz) (DF option: Kite Hill plain cream cheese)
2 tbsp butter (DF option: Earth Balance)
1 small white onion
Shredded chicken breast (2-4 chicken breast depending on how much chicken you prefer)
1 tsp minced garlic
Salt & pepper to taste
Dice your onion and add it to a large pot. Add 2 tbsp of butter and cook on low-medium heat until softened.
Cut the cream cheese into small pieces and add it to the pot with 1 cup of cheddar cheese and 2 cups of chicken broth. Cook until the cream cheese and shredded cheese has melted fully into the broth.
Once the cheese is melted fully, add the canned ingredients, the garlic and the salt and pepper to the pot and cook until everything is combined.
Now add your shredded chicken and SERVE!
