One Pot Spinach & Ginger Chicken Noodle Soup

Ingredient:

  • 1 small red onion (diced)

  • 3 carrots (peeled & sliced)

  • 1/4 cup of spinach (chopped)

  • 1.5 cups of precooked chicken (diced)

  • 1-2 tsp chicken bullion

  • 1 tsp ginger

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • Salt and pepper

  • 6 cups of chicken stock

  • 1-1.5 cups of noodles

  • Green onions (to top)

  • Parmesan cheese (to top)


Directions:

  1. In a large pot, add your cooked chicken, carrots, spinach and onion.

  2. Then add in 1/2 cup of chicken stock and sauté until your carrots are tender.

  3. Add all the seasonings to your pot along with the chicken stock and the noodles.

  4. Bring to a boil and cook until the noodles are finished.

  5. Serve with chopped green onions and parmesan cheese.
