1lb Italian sausage
1 tbsp olive oil
1/2 cup chopped red onion
1 can of regular fire roasted tomatoes (14.5oz)
1 can of garlic fire roasted tomatoes (14.5oz)
1 cup of dried lentils
6 cups of vegetable broth
1 large shredded and peeled carrot (roughly 3/4 cup)
Seasonings: salt, pepper, 1 tsp garlic powder, 2 tsp onion powder and 1 tsp italian seasoning
19oz bag of four cheese tortellini
2 large handfuls of fresh spinach
Sautee ground Italian sausage, red onion and olive oil together in a dutch oven or large pot until meat cooked.
Add 1 can of regular fire roasted tomatoes, 1 can of garlic fire roasted tomatoes, 1 cup of dried lentils, 6 cups of vegetable broth and 1 large shredded carrot (roughly 3/4 cup to the pot and season with salt, pepper, onion and garlic powder and Italian seasoning.
Cover and cook on low for about 30 minutes.
After 30 min add 1 19oz bag of four cheese tortellini and 2 large handfuls of fresh spinach.
Stir, cover and cook for 5-10 min. (Until tortellini is cooked through)
Add fresh mozzarella slices to the top and broil on high until melted, bubbly and slightly golden.
Top with fresh chopped parsley when finished.
