One-Pot Sausage, Lentil & Tortellini Soup


Ingredients:

  • 1lb Italian sausage

  • 1 tbsp olive oil

  • 1/2 cup chopped red onion

  • 1 can of regular fire roasted tomatoes (14.5oz)

  • 1 can of garlic fire roasted tomatoes (14.5oz)

  • 1 cup of dried lentils

  • 6 cups of vegetable broth

  • 1 large shredded and peeled carrot (roughly 3/4 cup)

  • Seasonings: salt, pepper, 1 tsp garlic powder, 2 tsp onion powder and 1 tsp italian seasoning

  • 19oz bag of four cheese tortellini

  • 2 large handfuls of fresh spinach

  • Fresh mozzarella

  • Fresh parsley

Directions:

  1. Sautee ground Italian sausage, red onion and olive oil together in a dutch oven or large pot until meat cooked.

  2. Add 1 can of regular fire roasted tomatoes, 1 can of garlic fire roasted tomatoes, 1 cup of dried lentils, 6 cups of vegetable broth and 1 large shredded carrot (roughly 3/4 cup to the pot and season with salt, pepper, onion and garlic powder and Italian seasoning.

  3. Cover and cook on low for about 30 minutes.

  4. After 30 min add 1 19oz bag of four cheese tortellini and 2 large handfuls of fresh spinach.

  5. Stir, cover and cook for 5-10 min. (Until tortellini is cooked through)

  6. Add fresh mozzarella slices to the top and broil on high until melted, bubbly and slightly golden.

  7. Top with fresh chopped parsley when finished.
