Egg Salad Ingredients:
10 hard boiled eggs (peeled)
1 avocado (mashed)
1 medium tomato (diced)
3 green onions (chopped)
2 tbsp of creamy Italian dressing
1/4 cup of jarred jalapeños
1 cap full of jalapeño juice (roughly 1-1.5 tbsp)
9 strips of turkey bacon (fully cooked and chopped)
salt and pepper
1 tsp garlic powder
1 tsp onion powder
White bread (toasted)
Spinach (for sandwich chopped)
Roasted garlic hummus
Loaded egg salad
Peel your hardboiled eggs and place them in a large bowl.
Slice your avocado in half (remove the seed) and mash the avocado while it's still inside the skin. Once it's mashed, add it to the same bowl as the eggs.
Chop up your tomato, jalapeños, turkey bacon and green onions. Add them to the same bowl.
Mash the eggs into bite sized pieces while mixing all the ingredients together. The avocado will provide part of the creaminess so it will be pretty easy to mash them together.
Once everything is combined, add the creamy italian dressing, the jalapeño juice and the seasonings. Mix well.
Spread a little hummus on one piece of toasted bread and then add the spinach on top of it.
Scoop the loaded egg salad on top of the spinach and top with hot sauce.
