Cabbage & Cauliflower Stuffed Peppers

Do you love cabbage rolls and stuffed peppers? Try my spin on it and mix the two together!


These delicious stuffed peppers are DF/ SF, keto friendly and a great LOW CALORIE option! How is this deliciousness keto friendly AND low calorie? Replace the traditionally used rice with cauliflower rice! I personally think it makes them even more yummy!

Ingredients:

  • 4 bell peppers

  • 1 bag of cauliflower rice (about 1.5 cups)

  • 1/2 lb of ground beef

  • 2 cups of uncooked cabbage

  • 1 cup of vegetable broth

  • 2 cans of tomatoes (drained)

  • 1 cup of mozzarella cheese (DF/SF- Daiya brand)

  • 1/2 large red onion

  • 1 tsp fresh garlic

  • onion powder to taste

  • salt and pepper to taste

Directions:

  1. To start, cut your bell peppers in half (vertically-down the middle) or cut the tops off and clean everything out of them. Then add them to a boiling pot of salted water and turn the heat down to medium. Let them cook until they are slightly soft. Then take them out and place them in a baking safe dish.

  2. Dice your onion and cook it in a pan with your ground beef. Season with salt pepper and garlic powder.

  3. When the ground beef is cooked fully, add the fresh garlic, 2 cups of uncooked chopped cabbage and a cup of vegetable broth. Cover and let that cook on medium heat until the cabbage is tender.

  4. Add both cans of tomatoes (drained) to the mixture. Be sure that your "stuffing" mixture is seasoned well and to your liking.

  5. Stuff the peppers with the mixture and add the shredded mozzarella evenly over the top of them.

  6. Bake for 10-15 minutes at 375 degrees or until the cheese is melted and the peppers are soft.

This entire dish is 1,152 calories and serves 4 people, making each serving only 288 calories! There you have it... another LOW calorie, filling and delicious dinner! Each serving is 2 of these stuffed peppers or 1 full stuffed pepper. If you decide to convert this recipe to feed 3 people instead, each serving is still only 384 calories! CRAZY!
