Bacon, Apple and Almond Salad with a Sweet and Spicy Chutney Dressing
This salad is SO GOOD! It’s sweet and spicy and has so many great textures and flavors.
Ingredients (Makes 2 large salads):
2 red apples (washed and chopped into bite size pieces)
1/4 cup of dried cranberries
1/2 cup of feta cheese
6 strips of bacon (fully cooked and crispy, chopped into bite size pieces)
6 cups of fresh spinach
1/4 cup of slivered/sliced almonds
Olive oil (about 1/2 a cup)
3 tbsp white wine vinegar
3 tsp sriracha
2 tsp red pepper flakes
2 tsp fresh garlic
2 tsp onion powder
salt and pepper
1 tbsp white granulated sugar
3 tbsp prepared chutney of your choice (I used Mayor Grey’s Chutney)
Divide all the salad ingredients in half and put them in two separate salad bowls.
Start with the spinach, then add the crispy bacon, some chopped apples, the almonds, cranberries and feta!
Add the vinegar, sriracha, chutney, red pepper flakes, garlic, onion powder, salt and pepper in a bowl and whisk together until combined.
Whisk the ingredients while you add the olive oil. You'll want to whisk the entire time and RIGHT before you add the dressing to the salad to make sure everything is combined well!
